The team behind recently shuttered Popul Vuh in northeast Minneapolis will convert the space into a modern Mexican cafe, market and bakery.
The new concept, called ViV!R (which means “to live” in Spanish), will offer a seasonal menu of Mexican small plates, grab-and-go deli items, daily breads and pastries. The retail market will feature items ranging from house-made snacks and condiments to home goods from Northeast artists and Mexican artisans.
“ViV!R will allow us to continue to create during a time when it feels like life is on hold,” Jami Olson, owner and general manager of ViV!R and taqueria Centro, which is housed in the same building, said in a news release.
Chef and co-owner Jose Alarcon collaborated with pastry chef Ngia Xiong to create the menu, which will include seasonally rotating empanadas and verduras, ceviches, salads and sandwiches. There will also be composed small plates like chilaquiles, enmoladas and tetela. There will be all-day breakfast items and a deli counter with bulk food by the pound.
The bakery case will include freshly baked sourdough and wheat breads along with traditionally-inspired Mexican pastries like conchas, cemitas and polvorones.
There will be Mexican wines, agave spirits and take-home cocktail kits as well.
The space, which is being designed by Shea architects, will include 38 seats indoors and a new 40-seat patio.
Expect a fall opening.
