Rubinstein Bagels Opens Its New Cafe Near the Amazon Spheres - Eater Seattle

After more than a year of planning, Rubinstein Bagels has opened its new cafe inside the Via6 luxury apartment building at Sixth Avenue and Lenora, across from the Amazon Spheres. On the menu to start are 12 kinds of bagels (including salted rosemary, shallot, and jalapeño white cheddar), a selection of smears, egg breakfast sandwiches, salads, and a duck fat matzo ball soup.

Those already familiar with owner Andrew Rubinstein’s bagel skills know this will be a treat for downtown denizens. The baker has been perfecting his recipe since 2016, using long-fermented sourdough with organic ingredients, and earned some critical praise when the bagels started popping up at cafes such as Citizen, Moonshot Coffee, and Ethan Stowell’s Cortina (with which it once shared a kitchen). The fixed location for Rubinstein was announced over a year ago and delayed due to COVID, but the shop had been getting by as a delivery and retail-only operation since.

Rubinstein tells Eater Seattle that the new shop will help him expand his bagel flavors, step up production, and experiment with different menu items, hoping to make each sandwich as refined as possible. “We’re bringing in a heavy smoked pastrami, which I think is amazing,” he says. “The turkey we sourced is like thanksgiving turkey, and not a slimy slice of compressed meat.” The drinks menu includes roasts from Olympia Coffee, and the kitchen across the hall has windows so waiting customers can see the baking process. Until dine-in is allowed, the cafe will be open for takeout and delivery (via Toast) to start.

Despite the challenges during the pandemic, Rubinstein’s joins a growing bagel scene in Seattle. Mt Bagel went from a former Instagram operation to opening its first fixed location in Ballard this year, Pinehurst deli Zylberstein’s started a popular monthly bagel club, the Fremont seafood restaurant Manolin opened a bagel and smoked fish pop-up in its space, and Westman’s partnered with new all-day cafe Post Pike on its sandwich menu. The trend should be welcomed. For decades, Seattle was limited on the bagel front, and with grab-and-go offerings in higher demand these days, the more, the merrier.
