Sava’s owner launches The Boro takeout cafe in Dixboro Village - MLive.com

SUPERIOR TOWNSHIP, MI -- A new multiple concept eatery offering a rustic-style dining experience in an old farmhouse is slowing opening for breakfast, lunch or dinner.

Sava Farah, owner of the Sava’s and Aventura restaurants, is opening the new venture inside 5400 Plymouth Road in Dixboro Village. The Boro, a takeout concept, had a soft opening on Monday, Dec. 21 and sold out of wood-fired pizzas within two hours, Farah said.

“All along, we had this plan for the carryout window so we were so lucky we could have something to fall back on,” Farah said.

The takeout concept is part of the larger restaurant Dixboro House. Farah wanted to incorporate a carryout portion before the coronavirus pandemic hit Michigan as a way of streamlining customer traffic. The Boro is inside a barn with original wood beams from the 1800s, and sits next to a new structural attachment, which will be Dixboro House, Farah said.

Michelin-star Chef Louis Maldonado and his wife, the pastry chef Anne Marie Maldonado, moved from San Francisco to run the menu. Maldonado offers a small breakfast menu from 8-11 a.m. with six items, including a breakfast sandwich, oatmeal, porchetta, smoked salmon, omelette, piadina and the Boro bowl.

From 11 a.m. to 9 p.m., customers can choose from six lunch and dinner items, or eight delicately-crafted wood-fired pizzas. As the restaurant expands and begins to welcome indoor dining, as allowed by state-ordered restrictions due to the COVID-19 pandemic, Maldonado plans to change the menu to include additional entrees with more roasted meats and pastas, he said.

“The Boro will be the first dining room we’re going to open, hopefully in the spring,” Maldonado said, adding he plans continue the all-day breakfast, lunch and dinner menu.

“With the pandemic hitting, obviously, to-go became a huge part of everybody’s business. As we started to build through the pandemic, we focused on that area first and what we’re going to offer,” Maldonado said.

The Boro also offers coffee and a variety of pastries and baked goods, such as croissants, brownies, muffins and cookies. An assortment of cakes and homemade sourdough and focaccia will eventually be added to the menu, Maldonado added.

The Dixboro House extension is covered in neutral tones, high ceilings and will have ample seating, lounging spaces, communal and formal dining. Outdoor benches and seating will be placed around the restaurant during the warmer seasons. The extension will also have glass barn doors separating Dixboro House and The Boro.

It will also have seating along the creek for a casual experience and a kid’s play area. The restaurant is slightly different from Farah’s traditional downtown establishments. The restauranteur is going for an “old world charm” in Dixboro House. Farah envisions customers will sit by the creek to watch the water flow or dine inside a charming and rustic barn she’s developing.
