New At Graze: Cafe And (Eventually) Wine Bar

For the first time in a year, every restaurant space inside Graze will be operating again soon, as a new cafe opens on the ground floor where Honey and Rye used to be.

The Last Drop Cafe will start out with hours of 7am-3pm serving coffee, tea and juice drinks as well as some pastries, yogurt parfait and an egg sandwich (and yes, the walk-up window will be open!) They’re also partnering with a Vermont company to offer a CBD syrup that can be added to coffee or tea.

By May, they plan to start using the space in the evenings as a wine bar from 4pm-10pm with pairing bites, charcuterie and some wine education options.

It’s the latest venture from Gerard and Brittany Klass who not only operate two other restaurants in the building, Soul Bowl and B.A.D. Wingz, they’re also part of the management team at Graze.

Brittany says when other potential deals for that space fell through, they decided to come up with their own solution.

“We had about two or three other cafes interested in coming,” she said, “but financing fell through or something else prohibited them from starting and we really did not like having the dead space. So my husband, Gerard Klass, thinks he can do anything. I think he can too!”

They hired Erin Ryan-Mosley to manage the cafe. “They’ve been great to collaborate and work with,” Erin said of the Klasses, “between their expertise in running successful businesses and my  coffee experience, it’s been a great combination.”

The name, The Last Drop, was Gerard’s idea as something both coffee and wine drinkers have in common–wanting that last drop.

The cafe will have a soft opening Friday and Saturday, April 2nd and 3rd from 8am-1pm with the grand opening April 7th. They will be open seven days a week.
