Ibarra said he didn't intend to have most of the menu be 95 percent gluten-free, but noted it's what makes their menu unique. 

"I can't think of another place that has country-fried steak with gravy that's gluten-free," Ibarra said. "It took me a long time to figure out the recipe but we got it."

Customers can tell if something isn't gluten-free as there will be an asterisk by it on the menu (which can be accessed online). 

Ibarra recommends the patty melt (a half-pound 44 Farms ground beef on Texas toast with onion spread, grilled jalapenos, and American and Swiss cheese) and the Crispy Chicken Macha (Mexican chili oil, nopal, cabbage, and queso fresco). 

The sauce on the Macha sandwich is sweet, tangy, and spicy all at the same time. It's something you'll need lots of napkins for, but worth the mess. Ibarra said it's his take on the "puro" chicken-on-a-stick San Antonians know and love (except on a bun, not a stick).
