ANN ARBOR, MI -- New visitors to Amanda Ratke’s restaurant typically have two reactions -- surprise and shock.

Ratke owns Ann Arbor’s Vedge Café, an entirely vegan restaurant serving a variety of deli sandwiches, including a French dip, Irish Reuben and gyros, as well as salads, desserts and more.

Ratke opened the café as a way to show restaurant goers that vegan food “can be tasty and can satisfy the omnivores just as much as the vegans and vegetarians,” she said.

The café's meat substitutes are made from scratch, using a spiced dough. Although many Ann Arbor restaurants have vegetarian or vegan options, Vedge Café is one of just a handful that is entirely vegan, Ratke said.

“People can come here and don’t worry with having to ask questions,” she said.

Best sellers include the Irish Reuben, which has corned “feeb,” sauerkraut, vegan Swiss cheese and Thousand Island dressing served on either toasted rye or whole wheat bread, and the chopped barbecue tofu salad, which features barbecue marinated tofu, avocado, black beans and house-made barbecue ranch dressing.

The café also serves potato salad and coleslaw, as well as award-winning chocolate peanut butter crunch and its “cheese”cake bites.

“It’s great seeing someone come in here skeptical and then leave with a big smile on their face,” Ratke said.

Vedge Café, 205 N. Main St., is open from noon to 6 p.m. Wednesday through Saturday and noon to 4 p.m. Sunday. Find the restaurant online, on social media or by phone at 734-929-4485.
