San Felasco Tech City, Alachua’s 82-acre aspiring “live, work, play” community, has spent the past four years constantly developing — and it shows no signs of stopping.
Since its initial opening in 2019, the development has integrated office space for nearly 60 companies, hosting tech-based businesses ranging from medical device companies to experimental laboratories. In August, software company Vobile announced that it leased 10,000 square feet worth of office space.
“We’re landing a company at [San Felasco] Tech City almost every three weeks,” said Mitch Glaeser, co-owner of SFTC. “The average size is 2,950 square feet.”
Now, SFTC can add a restaurant to its latest list of expansions. Harvest Thyme Express, an eatery focused on healthier dining options, will open its third location in SFTC in February. The 2,400-square-foot cafe will offer breakfast and lunch options, as well as a drive-thru for customers on the go.
The addition of Harvest Thyme Cafe will fill a gap in SFTC amenities, Glaeser said: all-day food availability.
Currently, on-site access to breakfast, lunch and dinner options varies between businesses, he said. Some larger companies have bodegas within their offices that carry snacks and self-serve meals, while smaller companies rely on food delivery services. Other employees, Glaeser said, choose to go off-campus to eat.
Over the past few years, SFTC has brought other food and drink options into the community. In 2022, Daft Cow Brewery opened, and Beaker & Flask Wine Co. set up shop early this year. In addition to these two locations, the covered outdoor area also hosts local food trucks like Everyday Amore, Cheffrey's and Taino Roots six days a week.
But while these food trucks are only open in the evenings, Harvest Thyme Cafe will serve food all day, Glaeser said.
“Everyone has endorsed them coming out there,” he said. “They do a lot of deliveries already to [San Felasco] Tech City, so people are familiar with Harvest Thyme. It’s going to be a perfect fit.”
Harvest Thyme Express’ lunch menu primarily features sandwiches, wraps and salads, but the cafe will also offer breakfast options like coffee, pastries and breakfast sandwiches. The restaurant also accommodates vegan, vegetarian and gluten-free diets.
The long-term vision for SFTC, Glaeser said, is to be a fully sustainable community including both businesses and residences. The goal is to build around 250 houses and provide each bedroom with a bicycle, leading to over 600 bicycles on campus, he said.
Education Station & Preschool Tech City, which accepts children aged 6 months to 5 years, opened in 2020. In January, Momentum Dance Arts will open a 7,250-square-foot dance school and studio on-site.
“It’s this very cool, unique and almost eclectic grouping of companies that are almost feeding off of each other,” Glaeser said.
