So today we're gonna be making *** butternut steak. It varies like about half of the things on our menu. It's gonna vary depending on what our farmers bring to us. We switch, we serve butternut steak in the winter and then we switch it over to cauliflower steak in the summer. So we rotate based on what is coming locally. Butternut's always been *** favorite of mine and we'll sometimes spiral it into *** pasta. Every time you come, it's probably gonna be *** slightly different version of butternut steak. And then you can take what's left over, put it in *** pot with some coconut milk and curry paste. And you've got *** Thai butternut soup. So you're using the entire vegetable in multiple different ways. Butternut squash can be one of those like love hate relationships. Um We'll peel it down to where the white is gone because that can be *** little bit bitter. It doesn't offer *** lot of, of value and then we'll cut it into steaks similar to this. So the thickness of the butternut steak is what's really helps with cooking it all the way through. You want to make sure that it's not too thick that the middle stays raw, but also that it's scored on both sides and that'll help cut some of the flavor into it. It's easy to overcook it where it just kind of loses its texture. And I've got some Brussels sprouts here that we just cubed up and we're gonna place in *** pan with radishes and some onions. I'm gonna add just *** little olive oil and carrot, ginger vinaigrette. So this is really just these fresh carrots put into *** food processor with fresh ginger some lemon and *** little olive oil. Butternut steak is one of my favorite dishes to make because it has so much flexibility we can take what comes from the farms. Um add in our own, whatever we feel like that day, whatever tastes and sensations we're going with and end up with something different. Almost every time I played it.
