Much of the restaurant industry has had to rapidly change its business model due to COVID-19, and we’re highlighting Nashville places that are attempting to stay open. Each day we will give you a critic’s pick for a restaurant and a dish, as well as a running list of restaurants still open that you can support. Today: Margot Café & Bar.
In Pandemic Times, restaurants have largely fallen into two camps: 1) They figure out an all-takeout model on the fly, or 2) they close up shop, rethink and relaunch a new menu when ready. Margot Café & Bar took the second route, and it was worth the wait. The first week of May, MarTOGO went live, and after a momentary website overload, it started working like the well-oiled machine we know Margot to be. Here’s the plan of attack.
Market
As someone who’s maxed out several credit cards in the service of takeout research, I feel qualified to declare the market/bodega development one of the top three things to come from the coronavirus pandemic. (The other two are to-go cocktails and a valid reason to never receive another unwanted hug from weird old white men.) The market page is always my first stop. Everything keeps well, so you don’t have to eat it right away; you can score fancy components like citrus marmalade or crème anglaise that you typically only get a drizzle or swipe of; and it’s basically a window into how a chef cooks at home
I fully believe the latter is true of Margot’s English Pea & Feta Spread. It’s simple, seasonal and punch-you-in-the-mouth fantastic, which is exactly the kind of food I envision chef-owner Margot McCormack eating at home. Banana bread, pear-pineapple jam, focaccia, Marché's Tuscan chicken salad! You can have it all through the magic of the market. Take advantage.
Cocktails
While Margot is offering a few classic beers and wine, cocktails are the move. The Greenbrier's Whiskey Sour is delightfully puckery and will remind you why sour mix doesn’t actually suck unless you get it from a bottle. (This one’s just lemon juice, lime juice and simple syrup.) My favorite is the Mean Green: vodka, cucumber, lemon and simple syrup. It’s herbal, refreshing and not too sweet. Plus, at 12 ounces, you can get three drinks out of one bottle for $14, which is a damn fine deal for Nashville.
Related tip: If wine’s what you want, Woodland Wine Merchant just down the block is offering a killer wine roulette package among a ton of other baller deals: six wines for $60, selected by them, in a very classy looking tote. It should hold you at least until Friday.
Merch
Which way do you want to go: '90s throwback, extreme food nerd, or tasteful man candy? Margot has all of them covered with her Seventeen magazine-inspired T-shirt, her limited-edition “A Chef’s Life” poster, and the PG Men of Margot Calendar. Sure, we’re halfway through 2020 already, but this being the year of COVID, it might be a collector’s item some day.
Dinner
How good can a potato chip really be? Kind of life-changing is the answer, and I’d forgotten that. The thin, crispy, perfectly salted housemade chips are so good that I might like them as much naked as I do with the aioli or ceviche they come with. Might. The red snapper ceviche is an ideal spring app with its succulent fish, fresh citrus and crunchy red onion and green tomato. After that, there’s really nowhere to go but chicken. Margot is known, as many French-inspired spots are, for the restaurant's pan-roasted bird, and Margot's version with luscious sweet-corn polenta, snap peas and jus is the definition of doing it right. On the sweet side, the tres leches cake is luscious and light yet decadent. It’s great for dessert, but even better for breakfast.
